چکیده

Pork sausages were prepared with backfat or commercial soybean oil enriched with vitamin E to determine the effect of irradiation on lipid oxidation and volatile production during storage. The sausages prepared with soybean oil had significantly higher amount of linoleic acid than the control. Lipid oxidation was increased by irradiation at Day 0 in aerobically packaged sausages prepared with both fat sources. The TBARS of aerobically packaged sausages increased with storage, but that of vacuum-packaged did not. The TBARS of sausages prepared with soybean oil was lower than that with the backfat (P<0.05), probably due to higher vitamin E content in the soybean oil than the backfat. Irradiated sausages, prepared with soybean oil, had higher TBARS than the nonirradiated at Day 0, but storage had no effect on the TBARS of vacuum-packaged sausages. Irradiation increased the production of most volatile compounds in aerobically packaged sausages at Day 0. The production of volatiles with very short retention time (<1.80 min) was the most sensitive to irradiation. Hexanal content in pork sausages increased by irradiation at day 0 or after storage in aerobic packaging. However, hexanal production in the sausages was significantly suppressed by vacuum packaging, and especially those prepared with soybean oil, because of the high vitamin E content in the sausages. # 2002 Elsevier Science Ltd. Lipid oxidation and volatile production in irradiated raw pork batters prepared with commercial soybean oil containing vitamin E

An emulsion-type raw pork batter was prepared using 10% (meat weight) of backfat or commercial soybean oil enriched with vitamin E to determine the effect of irradiation on lipid oxidation and volatile production during storage. Batters (approximately 100 g) were vacuumor aerobically packaged and irradiated at 0, 2.5 or 4.5 kGy. Irradiation increased lipid oxidation of aerobically packaged raw ...

Effect of Sargassum sp. and Vitamin E on Stability of Fish Oil Enriched Meat in Broiler Chickens

The present study was aimed to assess the influence of brown marine algae and vitamin E (VE) (160 ppm α-tocopheryl acetate) on stability of chicken meat enriched with fish oil. In this study, 360 d-old broilers (Arbor Acres Plus) were randomly assigned to 6 treatment groups with 4 replicates of 15 birds in each. Experimental groups consisted of corn-soybean basal diet (C), corn-soybean basal di...

Production of Omega-3-Enriched Meat through Feeding Broilers with Ultrasonicated Flaxseed Oil Nanoemulsions: Performance, Serum Composition, Physicochemical Properties and Oxidative Stability

This study aimed to produce omega-3-emriched broiler meat by using ultrasonicated flaxseed oil nanoemulsions coated with whey protein-sodium alginate. Three hundred 1-d-old (Ross, 308) male broiler chicks were allocated randomly to 5 experimental treatments with 4 replicate pens. Experimental treatments included basal diet (BD), basal diet plus flaxseed oil (BD+FO, 1 mL/kg/BW), basal diet plus ...

Effect of antioxidants on the quality of irradiated sausages prepared with turkey thigh meat.

The effects of antioxidants on the flavor and color of electron-beam-irradiated turkey sausages were studied. Sausages were prepared from turkey thigh meat, NaCl (2.0%), phosphate (0.5%), water (10%), and one of five antioxidant treatments (none, vitamin E, sesamol, rosemary extract, or gallic acid at 0.02%). Sausages were stuffed and cooked in an 85 C smokehouse to an internal temperature of 7...

Effects of Vitamin E and Volatile Oils on the Susceptibility of Low-Density Lipoprotein to Oxidative Modification

Antioxidant consumption has been reported to be inversely associated with the incidence of coronary artery disease. To clarify the possible role of vitamin E and volatile oils in the prevention of atherosclerosis, the effects of these compounds on the susceptibility of low-density lipoprotein (LDL) to oxidative modification were investigated. In this study, vitamin E and seven volatile oils “an...
